Brick ovens have been used throughout the Mediterranean and other parts of the world for centuries. These brick ovens are built with special fire bricks that store the heat released by flames and then release the intense heat in a consistent way. Brick Oven Pizzas Cook More Evenly
A brick oven pizza cooks much differently than your typical commercial oven. There are two types of heat created within a brick oven, and both are essential to creating the signature flavors found throughout Bertucci’s menu. Pizza cooked in a brick oven is placed directly onto the hot bricks, called the brick oven floor. The floor contains “bottom heat,” which crisps and cooks the crust. The “top heat” of the oven is created by the flames providing even heat distribution which cooks the pizza toppings and crust to a perfect golden brown finish at the same time.
Many Italian restaurants use conventional ovens which do not typically provide even heating throughout. Hot spots in ovens can result in soggy crusts or overcooked toppings. Brick ovens are continually warmed by flames throughout the baking process and pizzas cook evenly, so no areas end up less cooked than others.
Do Brick Oven Pizzas Cook Faster?
Absolutely! The intense heat retained by the fire bricks allows our ovens to maintain a consistently high temperature, allowing Bertucci’s chefs to cook pizzas faster. There is virtually no wait time between taking a finished pizza out of the brick oven and putting in the next pizza to cook. The high heat and faster cooking lock in flavor without overcooking the pizza, resulting in a delicious balance between crispy and juicy toppings.

The consistent heat throughout the brick oven floor quickly eliminates excess moisture in the dough resulting in an evenly crisp pizza crust. This isn’t the case in conventional ovens at other Italian restaurants, where certain portions of the crust may become soggy and limp. Nobody likes soggy pizza crust! Brick oven pizzas are crispier and Bertucci’s believes that brick oven-baked pizza crust is the best there is, so it’s what we serve our guests every single day.
